La kalkunen vile på kjøkkenbenken i minst 2 timer før du setter den inn i ovnen. Dette er det som gjør at du får en SAFTIG KALKUN ;O)<br />
Jeg legger smør som jeg bruker ostehøvel for å få fine skiver til å legge fint på kalkunen. Salter og pepprer godt. Har du Gåse fett, er dette også veldig godt å smøre over kalkunen. Du kan også legge spekk eller beacon i tykke skiver over kalkunen.<br />
Legg kalkunen med brystet ned i langpannen. Kalkunfettet er konsentrert på ryggen, så da siver det ned i brystkjøttet under steking og gjør det mørere og saftigere.<br />
La kalkunen steke ved 200 grader i 30 minuter før du senker tempraturen til 180 grader. Stek så ut tiden som er til din kalkun. Se vekt litt lenger ned. Den siste halve timen, snur du kalkunen, så den får en gylden og fin farge på brystet. Pass på og øs kraften fra pannen over kalkunen. Sjekk om den er ferdig ved å stikke en strikkepinne eller en spiss kniv, der den er tykkest, ved kneleddet. Siver det ren kraft ut, er kalkunen ferdig ;O) La kalkunen få vile lunt mens du ordner med tilbehør. Den kan stå i nesten en time uten å bli kald, om du pakker den godt inn. Kraften som siver ut, bruker du i sausen.<br />

Sausen<br />
Bruk innvollene som ligger i posen inni kalkunen.<br />
Legg de i en gryte, og tilsett :<br />
<br />
1-2 løk<br />
1-2 gulerøtter<br />
1 pastinakk ell.<br />
2-3 ts Salt smak deg frem senere når sausen er nesten ferdig<br />
5-6 pepperkorn<br />
2 laurbærblader<br />
<br />
Fyll en passe stor gryte til dette, med vann som dekker godt over innvollene og grønnsakene. la det stå å trekke/småkoke i 2 timer. Sil kraften over i et litermål/eller i fatet som kalkunen er blitt stekt i. (det blir ca. 1 liter kraft)<b> Da får du med deg ALL kraften fra Kalkunen med i sausen</b> du nå holder på å lage ;)<br />
Legg så smør ca 50g i en gryte og smelt på middels varme. Ikke la smøret bli fresende varmt, da får det ikke beholde sin gode smak. Ta 3 toppet ss med maisenna, og rør godt inn i det smeltede smøret. Hell så all kraft opp i gryten, og rør godt så det ikke blir noen klumper i sausen. la det få koke opp og tykne til en fin og god saus. Smak til med 2dl. rødvin og om det trengs litt mere salt og pepper. Avslutt med 2 dl. Fløte. Se til at Sausen er GOD OG VARM når den serveres.<br />
Server gjerne med Poteter, dampen rosenkål, beacon stekt i biter og litt tyttebærsyltetøy om ønskelig ;O) Dette er så godt ;O)<br />

<span style="font-size: large;">Første gangen jeg treffer Bestemor, får jeg et vurderende blikk, en del spørsmål, og så litt oppgaver som må gjøres. Så fikk jeg klar beskjed etter en stund, om at <i>jeg var et realt kvinnfolk som viste hvordan man skulle jobbe</i>. Hmmm! det var et stort komplement fra denne kvinnen, så jeg måtte trekke litt på smile båndet. For jeg kjente jo at hennes direkte tale, falt meg i smak. Men jeg kjente og at jeg ikke kunne tenke meg å være hennes fiende ;O) Nå har det seg slik, at jeg så vidt rakk å bli kjent med denne Bestemoren før hun blir syk, og noen år senere dør i en alder av nesten 90 år. Min svigermor spør om jeg har lyst til å lære meg å lage lefser, da ingen andre i familien her viste noe interesse for det. Jeg var ikke sen om å si JA til denne erfaringen. Vi tok hennes mors, «Bestemor», sin oppskrift, som Bestemor har brukt i mange år. Hun satt i et eldhus og bakte lefser for venner og bekjente i flere år. Jeg tror alle kjente til de gode lefsene til "Bestemor Ding Dong" ;O)</span></div>

Melken skal varmes opp og smøret smeltes i. Dette skal ikke koke, men røres i med en tre sleiv til alt er smeltet sammen og du ser det er på kokepunktet. Litt av den kalde melken beholder du, for at du kan røre inn eggene slik at de ikke skiller seg når de kommer i den varme melken. Ha hvetemel og resten av melken med eggene i og rør godt sammen. (dette er varmt og må være varmt ;O/)</div>

Deigen skal være fast og god. Viktig at du legger et rent klede over, slik at deigen holder seg noenlunde varm. Ta så ca. 50 eller 100g deig, kommer an på hvor stor takke du har, og kjevl den ut på en rund plate, på størrelse med din takke, og kjevle den så tynn som mulig. Bruk mel til hjelp så den ikke setter seg fast. Snu slik at du får den så rundt som mulig.</div>

Stekes på en ikke for varm takke. Gylden og fin og legges i vått handkle. Når den er myk og fin, tar du å smører halve lefsen med smør og sukker ( se oppskrift) bretter over helt og smører kun halve lefsen, når den ser ut som en halv måne. Bretter den igjen, og klipper om det er behov for det, i kantene slik at det blir en fin og rundt kant...å så får du smake på biten som blir liggende igjen på borde... DET ER KOS!!!!</div>

I stedet for å elte deigen for å bringe ut glutenet i melet, oppnår du samme effekt gjennom å bruke svært mye veske og la deigen heve over lang tid. Tiden og vannet gjør all jobben for deg. Den lange heve tiden gjør dessuten til at smaken får god tid til å utvikle seg. Resultatet : De lekreste og mest vellsmakende brød man kan tenke seg ;O) Jeg setter på ovnen på 250 grader. Gjør deigen klar med fire løft med en liten spatell inn mot midten, etter at deigen har stått på benken i <u><i>15-25 timers heving</i></u>. Snur deigen og legger den i en illfast bolle med lokk. <u><i>Stekes i ovnen i 30 min, tar av lokket og steker vider i 15 min i 220 grader</i></u>. Når dette er gjort, setter jeg en ny deg, slik at jeg igjen kan gjøre dette neste morgen. Gjett om jeg har fornøyde barn ;O)) En meget god matpakke med godt pålegg på, og masse paprika!!</span><br />
